5 Day Diet Challenge: DAY 2 – Fruits & Veggies

 

Not only will fruits + veggies add extra nutrients to yur diet, but the volume (and fiber) will help to make meals more satisfying. And as an added bonus you will feel fuller longer!

 

Here are some ideas:

  • Toss some veggies (spinach, mushrooms, peppers, onions, or tomatoes) into scrambled eggs for breakfast. I love to make spinach, tomato and goat cheese omletes for breakfast!
  • Try adding broccoli slaw (you can find it near the bagged fresh salad in the produce section) to your sandwiches, wraps, or salads for lunch – it adds a nice crunch but won’t change the flavor.
  • Swap avocado for mayo the next time you make a sandwich. It is super delicious. (This adds healthy fats too!)
  • For dinner, serve meals and leftovers on top of wilted baby spinach – just sauté in a pan with a little olive oil and some salt until just wilted (only a few minutes). Wilted spinach is great in pasta, pierogies, and rice, too!
  • Try cauliflower with a little milk and a tad of butter and some salt instead of mashed potatoes. You will be surprised how yummy this is! As an alternative, you can saute up some riced cauliflower with salt and olive oil as well!
  • Sub spaghetti squash or spiralized zucchini for pasta. Pro tip: Slice spagetti squash into rings instead of in half and you get the longer spagetti like strings. (add a little sauce and/or salt & pepper – it is surprisingly delicious!)
  • Try baked sweet potato fries instead of regular fries. Add some salt and a little cinnamon when they come out of the oven for some additional flavor! (adds tons of nutritional value to your fries with this simple swap)
