Who doesn’t like variety in their healthy breakfast options? I know I do. It can get boring eating the same things all the time. That’s why I decided to make the waffle a bit healthier. These easy protein waffles are great as a breakfast or as an anytime snack.

Easy Protein Waffles

So there are a million different recipes for protein waffles out there. You’ll see things like low carb, keto, meal prep, and healthy protein waffles. I do love a good crispy waffle. If I have a chance to make one that’s actually good for me that’s a huge bonus. I’ve adapted this one after trying a few different recipes. In the photos, you’ll see that I used chocolate protein powder but feel free to use vanilla or whatever flavor you feel like. Traditionally you will see vanilla used but it doesn’t have to be a hard and fast rule. As I mentioned, I use chocolate most of the time and we like them just fine. My 8-year-old does as well.

Step 1 – Gather ingredients and mix

First, preheat your waffle iron. Then, you have to get your ingredients together. As the title states, this recipe only uses 3 ingredients. Protein powder, eggs, and baking powder. If you use an isolate protein then they will turn out super dry so I recommend using a tablespoon of coconut oil to add back in some moisture.easy protein waffles

Next, you mix all of your ingredients together. Beat the eggs then add the dry ingredients and blend well. I like to use a measuring cup with a pour spout so that it’s super easy to portion out the waffles into the waffle iron.

Just a warning. Because of the eggs, it will have a slimy sort of texture about it. That’s ok. It cooks out and you won’t even notice it, I promise you. It was a little weird the first time I made them but you get over it since you’re not eating it like that.

Step 2 – Cook!

Once all of your ingredients are mixed well together it’s time to start cooking the waffles. Pour enough batter into the iron so you can get a complete waffle. Close the lid and cook according to your individual waffle iron’s instructions.

Be careful to not overfill your waffle iron You can see in the photo from mine where it exploded out the side. It doesn’t harm the flavor but it sure as heck makes a huge mess and it’s a pain in the rear end to clean up.

Step 3 – Enjoy your healthy protein waffles!

Once the waffle is golden brown remove it from your waffle iron and top with your choice of toppings. You can use peanut butter (or any nut butter of choice), chocolate sauce, maple syrup, mini chocolate chips, fresh berries or a fruit compote.

This recipe makes 3-4 waffles depending on your waffle iron. When I took these photos it made 3.5 waffles. They will keep in the fridge for about a week or for 2-3 months in the freezer.

To freeze let the waffles cook to room temperature before you wrap up. Use tight-fitting plastic wrap or a ziplock bag.

To defrost you can place in the refrigerator overnight then reheat in the toaster or toaster over to crips back up. You can also microwave but then the waffle won’t be crispy.

  1. I tried to use my Carnivore Protein powder and it didn’t work. I guess I can try the Vegan Pea Protein I have, I am just trying to stay away from dairy. Any suggestions?
